Porkchops and Rice
The thing about living alone and cooking for one is that you often choose convenience over just about anything. I find myself in that same boat, who wants to spend 30 minutes to an hour preparing a meal that only you will enjoy? When I get home from work, I want to eat-and eat quickly.
Luckily, I have discovered/created an awesome combination that requires very little attention or time to prepare. The recipe is as simple as the title sounds: Porkchops and Rice.
I purchased some hand-cut boneless porkchops from the grocery that were on sale for $2.83. Next, I spent a total of .94 cents on a bag of Uncle Ben’s Rice. Total cost of the meal: $3.77. You just can’t beat that price.
Here’s how easy it easy to prepare:
In a large skillet, turn the stove on to medium heat and drop in the porchops for about ten minutes, turning them at least once until they are fully cooked through (not pink through the middle).
After they are done cooking, I baste each side in the barbecue sauce of my choice, turning once more so that they cook in their own juice for a bit.
Next, heat up the Uncle Ben’s Rice for 90 seconds in the microwave:
Once the rice is done, I dump the contents into a medium sized bowl. Then all you do is take the porkchops, dice them up into bite sized pieces, drizzle some more barbecue sauce on them, dump into the bowl with the rice, mix and combine the two ingredients and Voila! you have a delicious, filling, and easy to make dinner:

That looks good! I have an idea for you: add a bag of frozen veggies. Look for the ones that you can microwave in the bag (steams the veggies), then just mix them in.
